Braised flat beef rib with tomato
This is a very classic dish. Not only the meat but also the soup is amazing!

- Wash the meat, cut into cubes, leave them in the water for about 30 minutes to remove the blood. It's best to change the water once in the meantime
- Prepare ingredients: Cut the ginger, garlic and chilli into small pieces and place them in a bowl, cut the spring onion (one bowl), light soy sauce and dark soy sauce (one bowl), sugar and salt (one bowl)
- Prepare tomatoes: Cut the bottom of the tomatoes in crosses, leave in hot water for 4 -5 minutes so that the skin can be removed very easily
- Cut tomatoes into small pieces
- Boil water, then add meat and cook for 2-3 minutes, removing foam
- Take out the meat and let it dry
- Put the broth aside
- Heat some oil, then add the meat and fry at a high heat for 2-3 minutes, then add the cooking wine
- Add ginger, garlic, chilli and spring onion, then stir fry briefly
- Add light soy sauce and dark soy sauce and stir
